Low Fodmap Chocolate Chunk Blondies – these deliciously chewy blondies have a rich butterscotch flavour and decadent chocolate chunks. Also gluten-free and dairy-free!

Ingredients
- 50 gms sugar ¼ cup, white
- 150 gms light brown sugar ¾ cup
- 115 gms butter 8 tbsp or low fodmap dairy-free spread
- 2 egg
- 1 tsp vanilla extract
- 125 gms gluten-free flour low fodmap, 1 cup
- ¾ tsp baking soda
- ½ tsp xanthan gum if not included in your flour
- 1 pinch salt
- ½ cup walnuts coarsely chopped
- ½ cup dark chocolate chunks
Notes
- These blondies freeze well. I usually wrap them individually in foil and freeze them for up to 1 month. When you want to eat them, just thaw and bring back to room temperature.
