Ingredients

Servings
  • 1.2 kg chicken thigh fillet boneless and skinless, 2 2/3 lbs

Marinade

  • 1 tsp salt
  • 2 tbsp olive oil garlic infused
  • lemon grated, zest of 1
  • 2 tbsp red wine vinegar
  • 1 tbsp paprika

Herb Sauce

  • 1 cup parsley fresh
  • 1 cup Coriander fresh
  • ½ cup oregano fresh
  • ¼ cup extra virgin olive oil
  • lemon juice of 1
  • salt to taste

Herb Sauce

Notes

  • If you are not on a low FODMAP diet, you can use regular extra virgin olive oil for the marinade and add 4 garlic cloves, crushed.
  • For the Herb Sauce, you can use mint instead of fresh oregano if you cannot find any. I would not recommend dried oregano for this recipe as it is too strong in taste.
