Luby’s Butternut Brownie Pie

Luby’s Butternut Brownie Pie is a light meringue-based dessert combining whipped egg whites, graham crackers, and pecans baked into a fluffy pie. It's topped with whipped cream and extra pecans, delivering a crunchy and airy texture with a sweet, nutty flavor.

Description

This pie begins by whipping egg whites with baking powder and cream of tartar until soft peaks form, then gradually adding sugar to reach stiff peaks. Crushed graham crackers and chopped pecans are folded in to add texture and flavor. The mixture is spooned into a greased pie plate and baked until set and a toothpick inserted comes out clean, creating a light, airy base with crunchy inclusions.

After cooling, the pie is topped with freshly whipped cream sweetened and flavored with vanilla, then sprinkled with remaining pecans for extra crunch. The result is a dessert that balances fluffy meringue with nutty and crunchy components, offering a delicate sweetness.

This pie is best served chilled, making it a nice dessert for gatherings or after meals when a lighter sweet is preferred.

Ingredients

Servings
  • 4 egg white
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon cream of tartar
  • 1 1/4 cups sugar divided use
  • 14 graham cracker squares broken into 1/2-inch pieces
  • 1 1/2 cups pecan divided use, pieces
  • 1 cup whipping cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 300°F and lightly grease a 9-inch pie plate.
  2. In a large mixing bowl, beat the egg whites and baking powder until soft peaks form. Add the cream of tartar, beating constantly. Add 1 cup of sugar, a tablespoon at a time, beating constantly until stiff peaks form. Use a rubber spatula to fold in the graham crackers and 1 cup of pecan pieces.
  3. Spoon the mixture into the prepared pie plate and bake for 30 minutes or until a wooden pick inserted into the center comes out clean. Cool completely on wire rack.
  4. In a small, chilled bowl, using chilled beaters, beat the cream until it just begins to thicken. Add the remaining 1/4 cup of sugar and the vanilla and continue beating until stiff peaks form. Do not overbeat.
  5. Top the pie with the whipped cream and sprinkle with the remaining pecans. Refrigerate until ready to serve.
