Luby's Fried Cheesecake

Luby's Fried Cheesecake is a dessert combining a creamy baked cheesecake filling with a sweet strawberry glaze, wrapped inside flour tortillas, then fried to a crispy golden finish. The fried exterior contrasts with the smooth, tangy cheesecake interior and fruity glaze, offering a rich and textured treat inspired by a distinctive presentation method.

Description

The cheesecake filling is prepared by blending softened cream cheese with sugar, eggs, sour cream, flour, vanilla, and a touch of fresh lemon juice to add brightness. This mixture is baked in a springform pan at 350 degrees for 30 minutes then cooled completely, resulting in a dense, creamy cheesecake base.

The strawberry glaze is made by combining water, sugar, and strawberry gelatin brought to a boil, then thickened with a cornstarch-water mixture. Red food coloring is added for an enhanced hue before folding in sliced strawberries once cooled, creating a glossy, thick fruit topping.

For the fried cheesecake, small rectangles (approximately 1 by 3 inches) of the cheesecake are placed onto 8-inch flour tortillas, then wrapped burrito-style and secured with toothpicks. These are then fried in neutral cooking oil until crisp and golden. After frying, the rolls are coated in a cinnamon sugar mixture and served with caramel sauce and optional whipped cream to complement the rich texture and flavors.

This dessert blends creamy, fruity, and fried elements, producing a unique and indulgent treat suitable for special occasions or comfort food cravings.

Ingredients

Servings

Cheesecake Filling:

  • 20 ounces cream cheese , softened
  • 1 cup sugar
  • 3 large egg
  • 1 cup sour cream
  • 2 tablespoons flour
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice fresh

Strawberry Glaze:

  • 2 cups water
  • 1 1/2 cups sugar
  • 1.5 ounces strawberry gelatin , (half a 3 ounce package)
  • 3/4 cup cornstarch
  • 2 teaspoons red food coloring
  • 1 pound strawberries , hulled and sliced

Fried Cheesecake:

  • 18 flour tortillas , (8-inch)
  • neutral cooking oil for frying, generic cooking oil
  • 1 cup sugar
  • 1 tablespoon cinnamon
  • 1 cup caramel sauce
  • Whipped Cream , optional

Instructions

Cheesecake Filling:

  1. Preheat oven to 350 degrees and spray a springform pan with baking spray.
  2. Whisk together the cream cheese, sugar, eggs, sour cream, flour, vanilla and lemon juice until smooth and completely combined.
  3. Add the mixture to your springform pan and bake for 30 minutes.
  4. Cool completely.

Strawberry Glaze:

  1. In a medium pot add 1 1/2 cups of the water, sugar and gelatin and whisk well until combined, then bring to a boil on medium heat.
  2. Whisk the remaining water with the cornstarch and pour it slowly into the pot while whisking.
  3. Whisk constantly until you see the sauce thickening (about 4-5 minutes).
  4. Remove from heat, whisk in food coloring.
  5. Let cool completely before adding in the strawberry slices.

Fried Cheesecake:

  1. Add a 1" wide by 3" long piece of cheesecake (try to keep the cheesecake intact if possible) to the center of your flour tortillas then fold the edges in and roll like a burrito.
  2. Secure with toothpicks (or if you have time to freeze before frying you can brush egg on the seams and freeze seam side down to seal the tortilla closed).
  3. When ready to fry heat 3 inches of oil to 350 degrees.
  4. Mix your sugar and cinnamon in a shallow bowl.
  5. Carefully put the cheesecake egg rolls into the hot oil (3-4 per frying batch) and fry until golden brown (about 3-4 minutes).
  6. When the cheesecake comes out of the fryer immediately roll it into the cinnamon sugar mixture then let it cool on a cooling rack.
  7. Serve drizzled with caramel sauce and strawberry topping and whipped cream if desired.
