Lupin Flour Monster Cookies

These soft baked colorful keto monster cookies are chewy with crunchy and gooey candy on every bite! They are easy to make, no dough chilling needed - and nearly zero net carb per cookie!

Monster cookies

  • ½ cup butter softened
  • ¾ cup sugar substitute
  • 2 egg large
  • 1 cup peanut butter smooth
  • 1 teaspoon vanilla extract
  • ½ cup lupin flour
  • ½ teaspoon baking soda
  • ½ cup sugar-free chocolate chips
  • ¾ cup sugar-free M&M's

Optional extras - Up to 1 cup of one or a mix of:

  • almond toasted - see Notes, sliced or slivered
  • coconut toasted, unsweetened, shredded
  • walnuts or pecans, toasted, crushed

Instructions

  1. Preheat the oven to 175 °C (350 °F).
  2. With a whisk or hand mixer, lightly cream 1/2 cup butter and 3/4 cup sugar substitute until the butter is pale.
  3. Add 2 large eggs, and beat until foamy.
  4. Mix in 1 cup smooth peanut butter and 1 teaspoon vanilla extract, and beat to form a uniform paste.
  5. Add 1/2 cup lupin flour and 1/2 teaspoon baking soda and mix until you get a sticky but firm cookie dough.
  6. Mix in 1/2 cup sugar-free chocolate chips, 3/4 cup sugar-free M&M's and your choice of extras (sliced or slivered almonds, unsweetened shredded coconut, crushed walnuts or pecans).
  7. You can shape the cookies straight away without chilling, but if the dough feels too soft to handle you can refrigerate for about 30 minutes first. Roll balls of dough, or use a medium cookie scoop (about 2 tablespoons) to place cookies onto the baking sheet, spaced at least 5 cm (2 in.) apart. The cookies don't spread, only puff up, so shape them to desired size and flatten them to about 1.5 cm (5/8 inch) tall.
  8. Bake monster cookies at 175 °C (350 °F) for 13-15 minutes - they should still look very soft when done. Do not over bake or they will be dry. Allow cookies to cool on baking sheet for a few minutes before transferring to cooling rack. They will firm up as they cool.

Notes

  • The optional extras are oat substitutes to make these monster cookies keto friendly. You can add up to one cup total, mixing them as you like. Toasting gives crunchy texture and best flavor. See how to toast almonds and shredded coconut in post.
