M & M Cookie Bars

M & M Cookie Bars blend melted and creamed butter with sugars, eggs, and vanilla, folded with flour, baking soda, and salt, then studded with chocolate chips and colorful M&M's. Baked in a pan and cut into bars, they offer a soft-centered, chewy texture with bursts of chocolate and candy crunch in each bite, providing a playful variation on classic cookie flavors in an easy-to-share form.

Description

This recipe develops cookie bar dough by combining melted butter with creamed butter and sugars to achieve a smooth, rich foundation. Eggs and vanilla bring moisture and flavor, while the addition of flour, baking soda, and salt balance the texture and leavening. The dough incorporates chocolate chips and M&M's candies, which add sweetness and color.

Pressed into a parchment-lined pan and baked until set, the bars have a tender, chewy center and golden edges. Allowing them to cool before cutting helps them hold their shape, resulting in convenient squares ideal for serving as a sweet snack or dessert with a combination of soft and crunchy textures due to the mix of chocolates and candies.

Ingredients

Servings
  • 1 cup butter (1/2 cup melted in saucepan, 1/2 cup mixed with sugars)
  • 1 cup brown sugar
  • 3/4 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla
  • 2 1/3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 2 cups M&M's candy

Instructions

  1. Preheat oven to 350 degrees. Melt 1/2 cup of butter (1 stick) in a saucepan over medium-low heat. Let it completely melt and start to bubble. Remove from heat.
  2. In a large mixing bowl, combine the remaining 1/2 cup of butter (1 stick), brown sugar, and sugar. Using a stand mixer or handheld mixer, mix for 2 minutes or until light and fluffy. Carefully add the melted butter and continue to mix for 3 minutes longer.
  3. Add egg, egg yolk, and vanilla and mix for 1 minute.
  4. Fold in flour, baking soda, and salt. Add chocolate chips and M & M's.
  5. Place a piece of parchment paper in a 9 x 13 pan. Press around the sides. Spread cookie dough into baking pan. Bake for 22-25 minutes. Remove from the oven and let set up for at least 15 minutes before cutting into bars.
