Ingredients

Servings
  • 1 medium onion diced
  • 2 garlic minced, cloves
  • 1 green bell pepper diced
  • 1 tablespoon olive oil
  • 1 pound ground turkey lean
  • 6 ounces tomato paste
  • 1 ounce can tomato in juice, chopped
  • 1/2 cup water
  • 1 teaspoon kosher salt
  • black pepper to taste (optional
  • spaghetti noodles for serving, cooked

Instructions

  1. Heat a large sauté pan over medium heat and add the olive oil. Add the onion, garlic and bell pepper and sauté for 5 minutes.
  2. Add the ground turkey, and use a spoon to break into small pieces. Cook until browned, about 5-7 minutes.
  3. Add the can of tomato paste, chopped tomatoes, water, salt and pepper. Stir and bring to a boil, reduce to a simmer, cover and cook for 20-30 minutes until sauce is thickened.
  4. Toss with cooked spaghetti noodles or pasts of choice. Sprinkle with parmesan cheese and red pepper flakes if desired.

Notes

  • To Store: Store leftover sauce in an airtight container in the fridge for 3-4 days once it has cooled completely. Reheat leftovers gradually on the stovetop or in the microwave.
  • To Freeze: Cool sauce completely, then portion into freezer bags or containers, removing excess air before sealing. Add a label and date. Freeze for up to 4 months. To reheat, thaw in the refrigerator overnight and reheat.
  • To Thaw: Transfer frozen sauce to the refrigerator overnight for gradual thawing. Alternatively, place sealed container or bag in cold water, changing water every 30 minutes until thawed.
  • To Reheat: Reheat thawed sauce on the stovetop over medium heat, stirring occasionally, or in the microwave, stirring halfway through until warmed through.
