Ma Yi Shang Shu (螞蟻上樹)

Ma Yi Shang Shu is a spicy Chinese dish featuring bean thread noodles and ground pork cooked in a savory sauce with garlic, chili peppers, oyster sauce, soy sauce, sugar, XO sauce, and sesame oil. The noodles are soaked then simmered in the flavorful sauce until tender and coated, creating a dish combining tender noodles with a rich, umami pork mixture spiced moderately.

Description

The Ma Yi Shang Shu recipe begins by soaking dried bean thread noodles for 15 minutes to soften them prior to cooking. Ground pork is stir-fried with garlic and chili peppers, forming a savory base. A mixture of oyster sauce, soy sauce, sugar, XO sauce, and sesame oil is added to develop a complex sauce that balances salty, sweet, and spicy flavors.

The soaked bean thread noodles are then added along with water, and the ingredients are simmered together with a lid on until the noodles absorb the sauce and become tender. Stirring during the cooking helps distribute the sauce evenly. The finished dish showcases the slippery, soft texture of bean thread noodles combined with the meaty, spicy sauce that clings to the strands, a signature of Ma Yi Shang Shu.

This recipe notes that the level of spiciness can be adjusted by omitting chili peppers, as XO sauce already contributes some heat. The dish pairs well as a main course or alongside other Chinese dishes. The noodles should be soaked before cooking for proper texture, and cooking continues until the sauce is absorbed.
