Ingredients
- 1 lb. ground beef I used 96/4
- 1/2 cup ketchup sugar-free, 120g
- 2 Tbsp yellow mustard 30g
- 1 tsp Worcestershire sauce
- 1 cup sharp cheddar cheese 2% shredded, 112g
- pickle chips for serving
- 4 flour tortillas I used carb balance
- special sauce optional for serving
Instructions
- Cook beef in a skillet over medium heat, crumbling as you go, until brown, then remove from heat. Stir in the ketchup, mustard and worcestershire sauce and season with salt and pepper to taste.
- Now, get all your ingredients ready! Wipe the skillet clean and spray with cooking spray. Set to medium heat. Place the tortilla flat in the skillet. Sprinkle cheese across the whole tortilla (1/4 cup each). Add the beef mixture to one side (118g each). Top with pickles (as many as you want) then fold the tortilla in half over the beef side. Press down with a spatula to seal the quesadilla and cook until golden brown.

Notes
- Prepare the beef mixture ahead to save time; assemble quesadillas when ready to eat.
