Ingredients
Maftoul
- 225 gms bulgur fine
- 18 gms salt
- 480 to 720 ml water 2 to 3 cups
- 500 gms whole wheat flour
- 500 gms all-purpose flour plain flour
Chicken Stew
- 2 kg chicken cut into 6 or 8 pieces, 4.4 lbs
- 1 tbsp extra virgin olive oil
- 1 ½ tbsp cumin ground
- ½ tsp Turmeric ground
- 1 tsp ground allspice
- 1 tbsp salt
- 1.5 kg onion cut into mid-sized cubes, 3.3 lbs
- ½ kg chickpeas canned or precooked, 1.1 lbs
To cook the Maftoul
- 1 onion chopped
- ½ tsp cumin ground
- ½ tsp ground coriander
- ½ tsp caraway seeds I did not use this, ground
- ½ tsp ground allspice
- 60 ml olive oil extra virgin, 1/4 cup
