Ingredients

Servings

Maftoul

  • 225 gms bulgur fine
  • 18 gms salt
  • 480 to 720 ml water 2 to 3 cups
  • 500 gms whole wheat flour
  • 500 gms all-purpose flour plain flour

Chicken Stew

  • 2 kg chicken cut into 6 or 8 pieces, 4.4 lbs
  • 1 tbsp extra virgin olive oil
  • 1 ½ tbsp cumin ground
  • ½ tsp Turmeric ground
  • 1 tsp ground allspice
  • 1 tbsp salt
  • 1.5 kg onion cut into mid-sized cubes, 3.3 lbs
  • ½ kg chickpeas canned or precooked, 1.1 lbs

To cook the Maftoul

  • 1 onion chopped
  • ½ tsp cumin ground
  • ½ tsp ground coriander
  • ½ tsp caraway seeds I did not use this, ground
  • ½ tsp ground allspice
  • 60 ml olive oil extra virgin, 1/4 cup
