Magic Cookie Bars
Description
This recipe uses a chocolate chip cookie mix combined with softened butter and egg to form a dough, which is baked initially in a greased pan. After baking, a topping of butterscotch chips, milk chocolate chips, and coconut is added, followed by drizzling sweetened condensed milk over the surface. The bars bake further until golden brown, developing a chewy texture from the condensed milk and chips melding into the cookie base. Cooling completely before cutting allows them to set.
The bars offer a mix of textures: a soft cookie crust and a sweet, coconut-studded topping. They can be stored in an airtight container for several days and freeze well. Using parchment paper to line the pan simplifies removal, and using sweetened condensed milk (not evaporated) is essential for the signature chewy consistency.
Ingredients
- 1 (17.5-ounce) package chocolate chip cookie mix Betty Crocker brand
- ½ cup butter softened
- 1 egg
- 1 cup butterscotch chips
- 1 cup milk chocolate chips
- 1 cup coconut flaked
- 1 (14-ounce) can sweetened condensed milk
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix Betty Crocker cookie mix, butter, and egg until well combined and dough forms. Press into the bottom of a greased 9x13 baking dish. Bake for 14-16 minutes.
- Once baked, sprinkle butterscotch chips, milk chocolate chips, and coconut over the cookie layer. Drizzle sweetened condensed milk over the top.
- Bake for 25-30 minutes longer or until golden brown. Let cool completely before cutting into squares.
Notes
- Store bars in an airtight container for 3-5 days, or up to a week refrigerated.
- Freeze individually wrapped bars in an airtight container for 3-4 months; thaw 30-60 minutes before serving.
- Lining the pan with parchment paper makes it easier to remove bars after cooling.
- Ensure to use sweetened condensed milk, not evaporated milk, for proper texture.
- The cookie base can be made from scratch if preferred.
