Eggs and vanilla extract add moisture and flavor. After mixing in the chips, coconut, and nuts, the dough is chilled between half an hour and three days to enhance texture and flavor.

Baking at 350°F produces cookies with slightly golden edges and soft centers, topped with a sprinkle of flaked sea salt and garnished with additional coconut and chocolate or butterscotch chips pressed lightly on top.   • 1 teaspoon baking soda
  • 1 teaspoon salt sea salt
  • 1 cup unsalted butter at room temperature
  • 1 1/2 cups light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 egg large
  • 2 teaspoons vanilla extract pure
  • 1 cup chocolate chips semi-sweet
  • 1 cup butterscotch chips
  • 1 cup coconut flaked
  • 1 cup pecans chopped

Instructions

  1. In a medium bowl, whisk together flour, graham cracker crumbs, baking powder, baking soda, and sea salt. Set aside.
  2. Using a stand mixer, cream butter and sugars together for about 1 minute. Add in the eggs and vanilla and mix until combined. With the mixer on low, slowly add in the dry ingredients.
  3. Stir in the chocolate chips, butterscotch chips, coconut, and pecans. Wrap the dough in plastic wrap and chill for at least 30 minutes, you can chill the dough for up to 72 hours.
  4. Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.
  5. Form the cookie dough into balls, about 2 tablespoons of dough. Place on prepared baking sheet, about 2 inches apart.
  6. Bake cookies for 10-14 minutes or until the edges are slightly golden brown, but centers are still a little soft. Remove from oven and sprinkle each cookie with flaked sea salt. Sprinkle the cookies with coconut and gently press a few chocolate chips, butterscotch chips, and pecans onto the tops of the cookies to make them extra pretty.
  7. Let cookies cool on the baking sheet for 2-3 minutes. Transfer to a wire cooling rack and cool completely.
