Magic Lemon Cobbler

Magic Lemon Cobbler features a simple batter poured over melted butter and topped with lemon pie filling, baked to golden edges with a soft, cakey texture. The mix of vanilla and lemon extracts enhances the fruity lemon filling, creating a balanced sweet-tart dessert with a moist crumb and buttery base.

Description

The Magic Lemon Cobbler is prepared by melting butter in a baking dish, then pouring a batter made of flour, baking powder, salt, sugar, buttermilk, vanilla, and lemon extracts over it without stirring. Lemon pie filling is spooned on top, and as it bakes, the batter rises through the filling, creating a cobbler with distinct layers of buttery crust, tender cake, and sweet-tart lemon topping.

The baking temperature and time allow the edges to brown while the center remains soft and moist, providing a pleasing texture contrast. The lemon pie filling adds both flavor and moisture, mingling with the batter.

This dessert is a practical choice when canned lemon pie filling is at hand and can be served warm or at room temperature, good with whipped cream or ice cream for added richness.
