Malai Chicken Tikka
Report
Malai Chicken Tikka is a recipe for juicy chicken skewers marinated with mild spices, yogurt, cream, gram flour and various meat tenderizers.

Ingredients
- 2 lb chicken tenderloins
- 2 teaspoon garlic paste
- 2 teaspoon ginger paste
- ¼ cup cooking oil
- 2 Serrano chilies (see notes)
- 1 lemon
- 1 kiwi (see notes)
- ½ cup full fat yogurt
- ⅔ cup heavy whipping cream
- 2 teaspoon salt
- 1 teaspoon garam masala
- 2 teaspoon cumin powder
- 1 teaspoon white pepper
- 1 teaspoon black pepper
- 2 tablespoon gram flour
Smoking (optional)
- 1 piece charcoal (see notes)
- ⅛ cup cooking oil
Instructions
- Cut each tenderloin into 2 pieces and set aside.
- Place your wooden skewers in water. (see notes)
- Chop and crush your serranos into a paste. (see notes)
- Peel and mash the kiwi to make a paste. (see notes)
- Add all of the ingredients into a mixing bowl and whisk well.
- Add the marinade to the chicken, cover, and refrigerate.
- After 30 minutes, remove the chicken and add it to the skewers.
- Preheat your grill to 450 degrees, then reduce the temperature to 375 degrees to cook the skewers. Turn the skewers at intervals and use a thermometer to check for doneness - 165 degrees fahrenheit. (see notes)
Smoking (optional)
- At the time that you start cooking the chicken, take a single charcoal and light it on a gas stove or burner.
- When the coal is well-lit, it should be grey and ashy on at least 80% of its surface place it in a small bowl.
- Place the chicken in a cooking pot, along with the bowl.
- Pour the oil on it slowly, and once the charcoal starts smoking, place the lid on it and let it sit for 10-15 minutes.
- Discard the charcoal and oil and serve the chicken with your favorite sides.
Notes
- The chilies - Rest assured, this chicken is not very spicy, even with these in the marinade. However, if you're particularly sensitive to heat, use one serrano or a deseeded jalapeno instead.
- The Kiwi - This is not just an ingredient; it's the secret to perfectly tender chicken. However, it should not be used for more than 30 minutes in this recipe, or the meat will get mushy.
- The skewers - A minimum of 30 minutes of soaking is required for wooden skewers. If you prefer, you can even soak these overnight.
- Alternate cooking methods - Don't want to or can't use a grill? Check out these alternative methods:
- Air fryer - This is my preferred cooking method when grilling isn't an option. I use an Air fryer oven that I have had for years and love. It allows me to cook fairly large quantities in one go, which is ideal for my family. Set the air fryer at 400 degrees Fahrenheit and preheat for 5 minutes. Cook the chicken for 15 minutes, flipping the skewers halfway through.
- Stovetop - If I use a stovetop for the chicken, I cook it in a Grill Pan. This helps give it a little char and some sear marks.
- Oven - This is my least favorite method because it's hard to get a good char on the chicken, but if this is the most convenient method for you, then by all means, opt for it. Preheat the oven to 400 degrees Fahrenheit and bake for 20 minutes, followed by a 2-minute broil on each side to give it some color.
