Mama's Ambrosia

Mama's Ambrosia is a chilled fruit salad featuring peeled navel oranges combined with shredded coconut and optionally sweetened with a little sugar. The orange sections are carefully separated from pith and membranes, retaining fresh juice collected during preparation. This simple, fruity dish is served cold and benefits from a few hours of refrigeration to blend flavors.

Description

Mama's Ambrosia centers on whole peeled navel oranges with all pith and membranes removed to reveal fresh segments. These are gently combined with shredded coconut in a bowl that captures the juice during preparation. A small amount of sugar may be added to balance the natural tartness or sweetness of the oranges, depending on taste.

The resulting salad is cool and refreshing with a combination of juicy citrus segments and the subtle texture and flavor of coconut. The citrus juice mingling with coconut brings a mild tropical note. The dish is best served after chilling several hours in the refrigerator so the flavors meld.

This ambrosia is typically served as a side or light dessert. Using half blood oranges with navel oranges enhances the salad's color variety. It can be prepared up to two days ahead and stored well covered in the refrigerator. Leftovers keep well refrigerated for 2 to 3 days.
