Manestra

Maneštra is a traditional Istrian soup popular throughout Croatia, which is similar to Italian minestrone.

Ingredients

  • 12 oz. romano beans previously soaked for 10 hours, dry
  • 8 oz. pork chops smoked
  • 1 prosciutto with bone
  • 2 carrot peeled and diced
  • 6 oz. parsnip peeled and diced
  • 1 potato diced, large
  • 1 celery diced, stalk
  • 5 oz. corn
  • 2 bay leaf
  • 10 oz. macaroni pasta
  • ½ cup olive oil virgin
  • 1 onion finely chopped, large
  • 5 cloves garlic , crushed
  • 2 tomato peeled, seeded and finely chopped
  • 1 teaspoon paprika
  • 6 basil chopped, leaves
  • 2 tablespoons parsley flat-leaf, finely chopped
  • 3 tablespoons white vinegar
  • salt
  • black pepper , freshly ground

Instructions

  1. Place soaked and drained beans, prosciutto bone, smoked pork ribs, carrots, parsnips, potato, bay leaves, celery, corn in a large pot
  2. Cover with water about 4 inches (10 cm) above the ingredients and bring to a boil over high heat.
  3. Cook over high heat for 2 minutes then reduce to low heat.
  4. Cover and simmer for 2 hours over low heat, stirring occasionally.
  5. Ten minutes before the end of cooking, cook the macaroni pasta separately in a saucepan according to the instructions on their packaging.
  6. At the end of cooking, remove the smoked pork chops and the prosciutto bone from the soup.
  7. Separate the meat from the bones, cut the meat into pieces and return the pieces to the pot.
  8. Heat the olive oil in a frying pan and sauté the onion over medium heat for 2 minutes, stirring frequently.
  9. Add the garlic, stir and sauté until golden brown.
  10. Add paprika and tomato and sauté for 1 minute.
  11. Add the basil and brown, stirring for a few seconds, then add this mixture to the soup as well as the cooked pasta shells.
  12. Taste and adjust salt and pepper.
  13. Add the parsley, stir and serve the maneštra with croutons or toast.
