  • 2 chicken breast diced, boneless skinless, grilled
  • 1 Mango peeled, pitted and diced
  • 1 green onion sliced thin
  • 1 jalapeno pepper stemmed, seeded and minced
  • 1/2 avocado peeled, pit removed and diced
  • 2 tablespoons cilantro chopped
  • 1/4 cup cashew chopped, roasted, unsalted
  • butter lettuce or lettuce of choice, for serving

Chili Lime Vinaigrette

  • 2 tablespoons lime juice fresh
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon ancho chile powder or regular chili powder
  • kosher salt to taste

Instructions

  1. In a medium sized bowl gently stir together the chicken, mango, green onion, jalapeño, avocado and cilantro. 
  2. In a separate small bowl whisk together all of the ingredients for the chili lime vinaigrette.
  3. Pour the vinaigrette over the chicken mixture and stir together until coated. Taste for seasoning.
  4. Serve in butter lettuce leaves or lettuce of choice, topped with the chopped cashews.
