Mango Ice Cream
Description
Mango Ice Cream uses ripe peeled and diced mango combined with whipped cream beaten to stiff peaks and sweetened condensed milk. This no-churn method avoids the need for an ice cream maker by relying on the cream's airiness and the mango's natural sweetness and moisture content.
The texture is smooth and creamy with mango pieces distributed throughout. The vanilla extract is optional for added aromatic depth. Freezing overnight solidifies the mixture into a scoopable ice cream that showcases the bright mango flavor complemented by the rich condensed milk.
Serving this ice cream after letting it sit a few minutes at room temperature softens it for easier scooping. Frozen mango or canned puree can be used though flavor and texture may be less intense. Gentle stirring a few times during freezing can reduce ice crystallization for a creamier finish.
Store in an airtight container in the freezer for up to three months. Adding a drop of food coloring can enhance the color but is optional.
Ingredients
- 2 Mango peeled, de-seeded, and diced, ripe
- 1/2 cup sweetened condensed milk 120ml
- 1 cup cream or heavy whipping cream, 240ml
- 2 teaspoons vanilla extract optional
Instructions
- Peel mangos and remove the seed. Cut into small cubes.
- Next, use a stand mixer or handheld mixer to beat cream until stiff peaks form.
- Add the condensed milk and mangos, then fold together to combine.
- Transfer the ice cream into a storage container, cover and allow to freeze overnight.
Notes
- Let the ice cream sit at room temperature briefly before serving for easier scooping.
- Using frozen mango works but reduces fresh flavor intensity.
- Canned sweetened mango puree can substitute fresh but watch moisture content to avoid a runny texture.
- Occasionally stirring the ice cream during freezing can help prevent ice crystals and maintain creaminess.
- Store in an airtight freezer-safe container up to three months to retain quality.
- Vanilla extract is optional and adds subtle flavor enhancement.
- Food coloring may be added for a brighter appearance but is not necessary.
