Mango Italian Ice
Description
Mango Italian Ice is made by dissolving sugar in water to create a syrup, then blending it with peeled and chopped ripe mango along with the juice and zest of a lime. The mixture is blended to a smooth consistency without over-pureeing, maintaining a fresh fruit texture. It is poured into serving dishes and frozen until solid, resulting in a bright, icy dessert with natural mango sweetness balanced by the acidity and aroma of lime.
This no-dairy dessert is light and refreshing, suitable as a summer treat or a clean finish to a meal. Its vibrant mango flavor is enhanced by the citrus, offering a pleasant combination of sweet and tart.
Ingredients
- 1 cup water
- 1 cup sugar
- 2 Mango peeled and roughly chopped, ripe
- 1 lime juiced and zested
- Pinch salt
Instructions
- In a microwave safe bowl, heat the water and sugar in the microwave (or in a small sauce pan on the stove top) until the sugar dissolves into the water. Remove from heat.
- Place the peeled and chopped mango into a blender. Cover and pulse a few times to break up the chunks. Then pour the sugar syrup, lime juice, and lime zest into the blender. Cover again and puree until just smooth. Don't over blend!
- Pour the mixture into ramekins or small souffle cups. Freeze until hard, at least 2 hours.
