Mango, Jicama, and Cucumber Salad

This Mango, Jicama, and Cucumber Salad combines diced mangoes, jicama, and cucumber into a crisp, refreshing mix seasoned with lime juice, salt, cayenne pepper, and chile powder or Tajin. The salad's bright flavors and crunchy textures make it a lively side or snack, with heat and acidity balancing the sweetness and mild earthiness of the vegetables and fruit.

Description

The salad consists of uniformly cubed ripe mangoes, crunchy jicama, and peeled, seeded cucumbers, which are tossed together with a dash of cayenne pepper, chile powder (or Tajin seasoning), lime juice, and salt. The chile and cayenne introduce a gentle kick without overpowering the fresh ingredients.

Refrigerating the salad for at least an hour before serving allows the flavors to meld and the acidity to slightly soften the jicama and cucumber, enhancing the overall taste and texture. This chilled salad suits warm weather meals or as a palate-cleansing side dish.

The use of Tajin, a seasoning combining chile peppers, salt, and dehydrated lime juice, introduces an authentic tang and mild spice, easily found in Mexican grocery stores. This seasoning can be omitted or substituted with chile powder if unavailable.

Longer resting times intensify the flavors, making this salad a good make-ahead option for gatherings or meal prep.
