Mango Popsicles

Mango Popsicles offer fruity, layered frozen treats made from blended frozen mango and almond milk, combined with a creamy Greek yogurt layer sweetened with maple syrup or an alternative sweetener. Freezing in stages builds distinct mango and yogurt layers, resulting in a smooth and refreshing dessert with balanced sweetness and tropical flavor.

Description

This recipe uses frozen mango blended with almond or coconut milk to create a smooth fruit puree that forms the base layer of the popsicles. After pouring about a third of this mixture into molds and freezing briefly, a blend of Greek yogurt, sweetener such as maple syrup or honey, and a dash of milk is prepared to form a creamy middle layer. The yogurt blend is added on top of the initial mango layer and frozen again.

Finally, the remaining mango puree completes the top layer, and the popsicles freeze fully for several hours. The staged freezing process prevents the layers from mixing, creating a striped, visually appealing treat with contrasting flavors and textures: the tart creaminess of yogurt complements the bright mango sweetness.

These popsicles can be gently unmolded by warming the mold bottom under lukewarm water to prevent melting. Using stevia as a sweetener allows a keto-friendly variation.

  • 2 ½ cups Mango frozen
  • ¾ cup almond milk or coconut milk
  • 1 cup Greek yogurt no sugar

Instructions

  1. Put mango and ¾ cup milk in the blender and mix well.
  2. Pour into popsicle molds about ⅓ of the way up and put in the freezer for about 30 minutes.  This will prevent the layers from mixing.
  3. Add Greek yogurt, sweetener and a dash of milk to blender.  Mix well.  If it's too thick to pour add a bit more milk until you get desired consistency.
  4. Remove popsicles from the freezer and add yogurt layer.  Put back in freezer for about 30 minutes.  
  5. Remove from freezer and add remaining mango layer.  Freeze again for several hours.  To unmold run the bottom of the mold under warm water - NOT hot.  If it's too hot the popsicles will melt.  

Notes

  • For keto-friendly popsicles, substitute maple syrup with stevia for sweetening.
