For the lime ginger dressing

  • 2 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 2 teaspoon ginger peeled, grated fresh
  • lime juice of ½ lime
  • salt
  • black pepper

To serve

  • 4 cups lettuce leaves mixed, 250 g
  • 1 Mango flesh cut into cubes
  • 1 avocado flesh sliced
  • 1 tablespoon mint chopped, fresh
  • 1 tablespoon black sesame seeds
  • lime wedges

Instructions

  1. Whisk the oil, syrup, ginger, lime and salt and pepper together.
  2. Put handfuls of the lettuce onto plates, then add chunks of mango and slices of avocado. Drizzle with the dressing and sprinkle with mint, sesame seeds and garnish with a wedge of lime.
  3. Best enjoyed immediately. If making ahead, don’t drizzle with the dressing until ready to eat.

Notes

  • Dress the salad just before serving to keep the lettuce crisp and fresh.
