Mango Strawberry Popsicles

Mango Strawberry Popsicles blend fresh mango and strawberry purees sweetened with honey and brightened by lime juice. The layered fruit purees create an appealing contrast of flavors and colors. These homemade frozen treats freeze solid with a smooth texture, offering a refreshing, fruity snack or dessert on warm days.

Description

The Mango Strawberry Popsicles are made by pureeing fresh strawberries with honey and lime juice, then pouring half the strawberry mixture into popsicle molds. After cleaning the blender, mango is pureed with more honey and lime, then added on top of the strawberry layer. The remaining strawberry puree is layered last before inserting sticks and freezing. This process creates distinct fruit layers in each popsicle.

Freezing the popsicles overnight ensures they set firmly and are easy to unmold. The honey provides gentle sweetness without overpowering the natural fruit flavors, while the lime juice adds brightness and balances the sweetness. The fresh, fruity ingredients produce a smooth, icy texture appropriate for handheld frozen treats enjoyed as a snack or dessert during warm weather.

The recipe notes recommend a specific popsicle mold but any standard molds will work. These popsicles are naturally refreshing and can be a healthier alternative to store-bought varieties since they use fresh fruit and minimal added sugar.

Ingredients

Servings
  • 1 Mango peeled, pitted and sliced
  • 2 cups strawberry halved, fresh
  • 2 tbsp honey or maple syrup
  • 2 tsp lime juice

Instructions

  1. Add the strawberries and one tablespoon honey plus one teaspoon lime juice to a food processor. Blend until you have a puree. Pour half the puree into the molds of your popsicle maker and pour the other half into a measuring cup.
  2. Wash your food processor. Add the mango and one tablespoon honey and one tsp lime juice to the food processor. Blend until pureed, then pour evenly into the popsicle molds.
  3. Add the remaining strawberry puree to the popsicle molds, then insert the popsicle sticks.
  4. Freeze for at least 4 hours, though preferably overnight.

Notes

  • Use a good quality popsicle mold for easy unmolding and even freezing.
  • Adjust honey to taste based on fruit ripeness and personal sweetness preference.
  • Freeze popsicles for at least 4 hours or preferably overnight to ensure firm texture.
