Description
The recipe achieves the distinctive Manhattan cocktail flavor by mixing alcohol base ingredients—whiskey, sweet vermouth, and bitters—with dairy and sugar before churning in an ice cream machine. The alcohol softens the final texture, making it slightly softer than typical ice cream.
Adding sliced Luxardo-style cocktail cherries near the end of churning distributes their texture and flavor throughout the ice cream. After churning, the ice cream is frozen until scoopable. Serving it in a lowball glass with a cherry garnish evokes the cocktail presentation.
This ice cream is rich in alcohol, so it is intended for adult consumption only and should be stored frozen until ready to serve.
Ingredients
- 2 cups heavy cream cold
- 1 cup milk whole, cold
- 1/2 cup sugar
- 4 Tbsp whiskey
- 2 Tbsp sweet vermouth
- 4 dashes bitters
- 2/3 cup cocktail cherries Find Luxardo cherries here, sliced in half; Luxardo brand used
- 2 Tbsp cherry juice from jarred cherries
Instructions
- Whisk together the cream, milk, and sugar and stir to dissolve the sugar.
- Add the whiskey, vermouth, bitters, and cherry juice. At this point I like to chill the mixture for an hour or two, but it's not absolutely necessary if you're in a rush. As long as it's cold, you're good to go.
- Pour the mixture into your ice cream machine and churn according to your machine's directions. Note: alcohol spiked ice cream churns a little bit softer than regular ice cream recipes.
- When the ice cream is almost finished, add in the cherries and allow them to get fully incorprated.
- Scoop the soft ice cream into a freezer safe container and freeze for at least a few hours until scoopable.
- Serve a scoop or two in a lowball glass, garnished with a cherry.
Notes
- This recipe contains a generous amount of alcohol and should be kept away from children.
- Chilling the mixture for 1–2 hours before churning can help improve texture but is not mandatory.
- The ice cream churns softer than regular recipes due to the alcohol content.
- Use Luxardo or similar cocktail cherries for authentic flavor and texture.
