Description

This tart starts with a thawed sheet of puff pastry gently rolled into a rectangle. A layer of mascarpone cheese is spread over the surface, leaving a border to allow the pastry to puff and hold the filling. Plums are sliced thinly in halves and arranged overlapping to cover the mascarpone.

The edges of the dough are gently rolled up around the fruit to create a raised crust that helps contain the juices released during baking. The tart is brushed with maple syrup, which caramelizes slightly in the oven, adding sweetness and a glossy finish. Baking until the crust is golden and mascarpone sizzling creates a contrast of textures—crispy pastry edges with a tender, creamy interior and soft baked fruit.

  • 1 heet puff pastry frozen, thawed
  • 4 ounces mascarpone cheese half of an 8 ounce tub
  • 6-8 plum extra just in case
  • 1/4 cup maple syrup the real stuff

  • confectioners sugar
  • Ice cream

Instructions

  1. Preheat the oven to 400F
  2. Place the puff pastry sheet on a sheet of parchment paper and gently roll out to a slightly longer rectangle.
  3. Spread the surface with mascarpone cheese, leaving an inch and a half free around the whole perimeter.
  4. slice the plums in half, remove pits, and then slice each half in thin slices, keeping them together. Fit the sliced halves onto the tart, see my photos for reference.
  5. Gently roll up the edges of the dough to meet the fruit and form a crust.
  6. Brush the fruit with maple syrup and bake for about 25-30 minutes, until the crust is golden, the fruit glossy, and the mascarpone is sizzling.
  7. Dust with powdered sugar if you like, then cut into squares and serve with ice cream.
