  • 1 medium butternut squash, peeled, seeded, cut into ½-inch cubes (about 4 cups)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 6 lices thick-cut bacon, cooked, crumbled
  • Parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the squash, oil, syrup, salt, and pepper until coated.
  3. Spread the mixture in an even layer on the baking sheet.
  4. Roast for 15 minutes.
  5. Remove the pan from the oven and carefully flip the squash. Top with the cooked and crumbled bacon.
  6. Return to the oven to continue baking for 20-25 more minutes, or until the squash is tender and lightly caramelized.
