Description

This recipe prepares pork tenderloin pieces seasoned with salt and pepper, then rubbed with a mixture of brown sugar, paprika, and cayenne pepper for a mildly spiced sweetness. Thin bacon strips are halved lengthwise and wrapped closely around each tenderloin, covering it evenly. After placing seam side down on a sheet pan, the bacon-wrapped pork is brushed with maple syrup and baked at 350ºF until the pork reaches 145º internal temperature.

After baking, the oven is switched to low broil to crisp the bacon surface further, adding texture contrast. The tenderloins offer moist, flavorful pork inside with a sweet-salty bacon crust. This dish is best enjoyed on the day it's made, as leftovers do not reheat or store well.

Ingredients

  • 1 pork tenderloin around 3 pounds, usually two pieces
  • 2 tablespoon brown sugar
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • salt
  • black pepper
  • 3 tablespoon maple syrup
  • 1 pound Bacon paleo if necessary, do not use thick bacon

Instructions

  1. Preheat oven to 350º.
  2. Season pork with salt and pepper.
  3. In a small bowl mix the brown sugar, paprika, and cayenne.
  4. Rub the spice mixture all over both tenderloins.
  5. Lay bacon slices out on a cutting board and cut in half lengthwise. They should be just touching each other at the sides.
  6. Lay one pork tenderloin on top of bacon and wrap bacon slices around the tenderloin so that the bacon meets on the bottom of the tenderloin.
  7. Place on a sheet pan seam side down.
  8. Brush with maple syrup.
  9. Repeat with the second tenderloin.
  10. Bake for about 30 minutes or until instant read thermometer reads 145º.
  11. Remove from oven.
  12. Turn oven to low broil and broil for a minute or two or until bacon crisps to your liking.
  13. Serve immediately.
  14. This tastes best on the first day and doesn't make great leftovers.
