Description
This recipe uses carrot pieces cooked in a skillet with water, salted butter, brown sugar, and maple syrup. The mixture is heated to boiling, then reduced to a simmer covered for 8 to 10 minutes until the carrots become tender. Removing the lid and increasing heat allows the water to evaporate, leaving a sticky glaze that coats the carrots.
Fresh thyme can be added for an aromatic herbal touch, complementing the natural sweetness of carrots and maple syrup. The seasoning with salt and freshly cracked black pepper provides balance, enhancing flavor complexity.
These carrots can be served as a side dish with meals where a sweet vegetable accompaniment is appropriate. Peeling the carrots before cooking improves their appearance but is optional. Baby carrots can be used as a convenience substitute. Maple syrup can be replaced with honey, which will offer a different but similarly sweet glaze.

Ingredients
- 1 lb carrot cut into 2”x1 ½” sticks
- ½ cup water
- 1 ½ Tablespoons butter salted
- 2 Tablespoons light brown sugar firmly packed
- 1 Tablespoon maple syrup
- 2 thyme optional, sprigs, fresh
- ¼ teaspoon salt plus additional to taste
- ¼ teaspoon black pepper plus additional to taste, freshly cracked
Instructions
- Combine all ingredients in a skillet over medium heat. Stir frequently until butter is melted.
- Increase heat to medium high and bring to a boil, stirring frequently.
- Reduce heat to a simmer, cover, and cook for 8-10 minutes or until carrots are just tender when pierced with a fork.
- Remove lid and cook, stirring frequently, on medium-high until water is evaporated and carrots are glazed.
- Taste-test and add additional salt/pepper if needed.
Notes
- Baby carrots can substitute regular carrots for convenience without peeling or dicing.
- Peeling carrots is optional but results in a brighter orange color and glossier appearance.
- Honey may be used in place of maple syrup for a different type of sweetness.
