Maple Pecan Gluten Free Shortbread

Maple Pecan Gluten Free Shortbread combines almond flour and chopped raw pecans with pure maple syrup, coconut oil, and vanilla to form a sticky dough. The dough is chilled, sliced into thin rounds, and baked until the edges achieve a delicate golden crisp, producing cookies with a tender yet crumbly texture and a warm nutty-sweet flavor.

Description

This gluten-free shortbread uses finely ground almond flour and raw pecans mixed with baking soda, sea salt, pure maple syrup, melted and cooled coconut oil, and vanilla extract. After combining dry and wet ingredients, the dough is shaped into a cylinder or log and chilled in the freezer or refrigerator to firm up. Once chilled, it is sliced into 1/4-inch thick cookie shapes and baked at 350°F for approximately 13 to 15 minutes until the edges turn golden brown.

The chilling step makes the dough easier to slice and helps the cookies maintain their shape during baking. The result is shortbread cookies with a subtle sweetness from maple syrup paired with rich pecan and almond flavors and a pleasant crisp edge while remaining tender within. Letting the cookies rest for 15 minutes after baking allows them to firm enough to remove from the baking sheet without breaking.

Ingredients

Servings
  • 2 cups almond flour finely ground
  • ½ cup pecan chopped, raw
  • 1/2 teaspoon baking soda
  • Pinch salt sea salt
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil melted and cooled
  • 1 teaspoon vanilla extract pure

Instructions

  1. In a mixing bowl, add first four ingredients and stir together. Add the remaining (wet ingredients) and mix until a sticky dough forms.
  2. Make a ball out of the dough, pressing it together, then place it on a sheet of plastic wrap and form a cylinder or a log (the log will be over a foot long, so if you'd like, you can cut it in two so that the logs are easier to manage/less deicate). Wrap the log tightly in the plastic wrap and place in the freezer for 30 minutes or in the refrigerator for 2 hours.
  3. When ready to bake, preheat the oven to 350 degrees F. Unwrap the cookie dough, place it on a cutting board, and slice 1/4-inch thick slices to form cookie shapes. Place dough on a baking sheet and bake for 13 to 15 minutes, or until edges are golden brown.
  4. Remove cookies from the oven, and allow them to sit 15 minutes before removing them from the baking sheet with a spatula.
