Cake Ingredients

  • 6 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 3 1/2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 3 cups butter softened, unsalted
  • 4 cups sugar
  • 4 egg large, whites
  • 3 teaspoons vanilla extract pure
  • 1 1/2 cups milk whole
  • 1/2 cup lime juice
  • 1 cup tequila
  • 4 Tablespoons lime zest
  • lime for decorating, slices
  • lime zest for decorating

Frosting Ingredients

  • 3 cups butter softened, unsalted
  • 3 cups shortening
  • 12 cups powdered sugar
  • 3 Tablespoons lime grated zest
  • 6 Tablespoons lime juice fresh
  • lime for decor, slices
  • sugar sprinkles for decor

Instructions

  1. Preheat the oven to 350 degrees and grease cake pans with baking spray, set aside.
  2. In a large bowl, combine the flour, baking soda, baking powder and salt.
  3. Using a standing mixer, cream the butter and sugar until light and fluffy.
  4. Beat together the egg whites and vanilla until combined. Gradually beat in the flour ingredients and milk until combined. Beat in the lime juice, tequila, and lime zest until combined.
  5. Divide the batter between the 3 cake pans.
  6. Bake in the oven for 25-30 minutes or until a tooth pick comes out clean. Allow the cakes to cool completely.

Frosting

  1. Using a standing mixer, combine all ingredients into the mixer and beat until combined, smooth and stiff with peaks.
  2. Scoop 1 cup of frosting into the piping bag and set aside.

Decorating

  1. Using the cake leveler, remove the domes from the cakes to level them out.
  2. Place one cake round onto the cake board. Scoop 1 cup of frosting onto the cake and smooth evenly.
  3. Place the second cake round onto the top of the frosting. Scoop 1 cup of frosting onto the second cake layer and smooth evenly.
  4. Place the last cake round onto the top of the frosting. Using the remaining frosting, frost entire cake.
  5. Pipe dollops of frosting onto the top of the cake. Place Lime slices onto the frosting. Zest a lime all over the top of the cake.
  6. Place into the fridge for an hour to allow the frosting to harden up a bit.

Notes

  • Store leftover cake refrigerated in an airtight container or cake carrier to keep it fresh for 3-4 days.
  • Allow cakes to cool completely and level before frosting to achieve smooth layers.
