Marinara Sauce

Marinara is a rich tomato sauce from Italy that is traditionally made with tomatoes, garlic, wine and herbs.

Ingredients
- 4½ lbs tomatoes , preferably from San Marzano
- 6 cloves garlic crushed
- 1 tablespoon dry Italian herbs (basil and oregano)
- 1 tablespoon sugar
- 2 tablespoons extra virgin olive oil
- salt
- black pepper

- Sterilized jars
Instructions
- Cut the tomatoes in half, and submerge in a large bowl of boiling water for 1 to 2 minutes. Hold under cold running water, then peel and seed them.
- Puree the tomatoes by rubbing them through a sieve (or using a blender).
- Pour the oil into the pan over a medium heat. Add the garlic, and fry for 2 minutes.
- Add the tomato puree, and bring to a boil.
- Add the dried herbs and sugar, and mix well.
- Stirring constantly, over medium-low heat, reduce the tomatoes until the desired consistency is achieved.
- Cook for 3 minutes, stirring regularly.
- At the last moment, season with salt and black pepper.
- Let cool.
- Mix the sauce well then divide it into the previously sterilized jars. Close tightly.
- Store in the refrigerator for several months.
Notes
- The marinara sauce will only have a long shelf life if it is hermetically sealed in a sterilized glass jar.
