Marinated Grilled Hawaiian Ribeye Steaks
Description
This recipe uses a marinade combining pineapple juice for natural enzymes and sweetness, soy sauce and Worcestershire for umami, rum and mirin adding depth and mild sweetness, along with ginger, garlic, turbinado sugar, and black pepper. The ribeye steaks are submerged in this mixture and refrigerated for 2 to 8 hours, allowing the flavors to penetrate and the meat to tenderize.
Grilling starts with a high direct heat sear (3-4 minutes per side) to develop a caramelized crust, followed by moving the steaks to a cooler area of the grill for slower cooking to the preferred doneness. Resting the steaks post grilling permits juices to redistribute.
Grilled pineapple slices, seasoned with Tajin or similar spice blends and grilled briefly, complement the steaks by adding a smoky, tangy-sweet contrast. This dish showcases a balance of tropical sweetness and savory richness suitable for summer barbecues or special dinners.
Ingredients
- 4 ribeye steak plural
- ¾ Cup pineapple juice
- ½ Cup soy sauce light soy sauce preferred
- ¼ Cup gold rum
- ¼ Cup mirin
- ¼ Cup turbinado sugar
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons ginger Finely diced, fresh
- 2 garlic minced, cloves
- ¼ teaspoon black pepper
Instructions
- Prepare the marinade by combining all of marinade ingredients in a small bowl or a large resealable plastic bag. Add the steaks and marinate in the refrigerator to 2-8 hours.
- When you are ready to cook the steaks, remove them from the marinade and pat dry with paper towels.
- On a hot grill, over direct heat, sear the ribeye steaks for 3-4 minutes per side.
- Move the steaks to indirect or lower heat. Continue to cook the Hawaiian ribeye steaks on the cooler part of the grill until they reach your desired level of doneness.
- Remove the steaks from the grill and rest for about 5 minutes prior to serving.
- While the steaks are resting, dust the pineapple slices with a little Tajin seasonings or other seasoning and grill on well-oiled grill grates for about 1-2 minutes per side.
- Serve the steaks with the grilled pineapple, and enjoy.
