Marinated Grilled Hawaiian Ribeye Steaks

Marinated Grilled Hawaiian Ribeye Steaks feature ribeyes soaked in a marinade of pineapple juice, soy sauce, rum, mirin, turbinado sugar, Worcestershire sauce, ginger, garlic, and black pepper. The marinade tenderizes and infuses the meat with sweet and savory tropical flavors, then grilling over direct and indirect heat develops a juicy, flavorful steak with caramelized edges.

Description

This recipe uses a marinade combining pineapple juice for natural enzymes and sweetness, soy sauce and Worcestershire for umami, rum and mirin adding depth and mild sweetness, along with ginger, garlic, turbinado sugar, and black pepper. The ribeye steaks are submerged in this mixture and refrigerated for 2 to 8 hours, allowing the flavors to penetrate and the meat to tenderize.

Grilling starts with a high direct heat sear (3-4 minutes per side) to develop a caramelized crust, followed by moving the steaks to a cooler area of the grill for slower cooking to the preferred doneness. Resting the steaks post grilling permits juices to redistribute.

Grilled pineapple slices, seasoned with Tajin or similar spice blends and grilled briefly, complement the steaks by adding a smoky, tangy-sweet contrast. This dish showcases a balance of tropical sweetness and savory richness suitable for summer barbecues or special dinners.
