Marry Me Chicken Bites

  • 1/4 cup all-purpose flour GF if needed, 28g
  • 1/2 tsp salt black pepper & paprika, each
  • 1 lb. chicken breast cut 1/2-inch pieces, boneless
  • 2 Tbsp butter unsalted, 28g
  • 2-3 cloves garlic minced
  • 1/2 cup chicken broth 120g
  • 1/2 cup half-and-half 120g
  • 1/4 cup Parmesan Cheese fresh grated (28g
  • 1/2 tsp Italian seasoning
  • 1/4 cup sundried tomatoes chopped, 30g

Instructions

  1. Whisk the flour, salt, pepper and paprika together.
  2. Cut the chicken into small pieces, about 1/2-inch (you’ll have a lot) then dry with a paper towel and place in a large bowl or ziploc bag. Add the flour mixture and toss until the chicken is evenly coated.
  3. Melt half the butter over medium heat in a large skillet, preferably stainless steel or cast iron. Move the pan around to spread the butter. Once hot, add half of the chicken bites leaving a little space in between them so they aren’t touching. Sear undisturbed for 3-4 minutes. Then toss around and cook for another 3-4 minutes or until cooked through (165F internal temp). Toss occasionally and make sure all sides are browned. Transfer to a bowl and set aside. Repeat with remaining butter and chicken.
  4. To the same skillet, add the garlic. Saute until fragrant, about 30 seconds. Deglaze the pan with the chicken broth and use a wooden spoon to scrape any brown bits.
  5. Reduce heat to medium-low, stir in the half and half and parmesan cheese. Simmer for 2-3 minutes.
  6. Mix in the Italian seasoning and sun dried tomatoes. Add the chicken back in and toss with the sauce. Let simmer together for another few minutes.
  7. Serve hot with fresh cracked pepper and grated parmesan and enjoy!

Notes

  • Drying the chicken bites well before tossing with the flour mixture allows the flour mixture to stay on better! This is important because this is where the chicken gets its flavor!
