Ingredients

  • 4-5 salmon skin removed, fillets
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 Tablespoon olive oil
  • 2 Tablespoons butter
  • ½ medium onion diced
  • 4-5 cloves garlic finely chopped
  • 1 cup heavy whipping cream
  • ½ cup chicken broth
  • 1/2 cup Parmesan Cheese shredded
  • 1/4 cup sun-dried tomatoes sliced
  • ¼ cup basil fresh
  • lemon optional, juice of ½ lemon

Instructions

  1. Pat dry the salmon fillets, combine all the spices in a small bowl, and rub seasoning all over the salmon fillets.
  2. Heat oil in a large heavy-duty skillet. Place salmon fillets in the skillet and cook 4 minutes per side. Transfer the salmon to a plate and set aside.
  3. Add butter and onion to the skillet and cook for 2-3 minutes or until translucent and lightly golden. Add garlic, and cook for 30 seconds or until fragrant.
  4. Next, add heavy cream, chicken broth, sun-dried tomatoes, and parmesan. Stir until combined. Taste the sauce and adjust the salt to your liking.
  5. Return salmon to the sauce and simmer for 2-3 minutes or until the salmon is cooked through.
  6. Turn off heat and garnish with basil and a fresh drizzle of lemon juice.
