  • 3 cups almond meal or ground almonds, 300g
  • ½ cup caster sugar superfine sugar, 100g
  • 2 ½ cups icing sugar 350g
  • 2 egg white
  • ½ teaspoon almond essence

Instructions

  1. Add the almond meal and both sugars to a food processor and pulse until it’s a fine powder.
  2. Add the egg whites and almond essence and pulse until it comes together into a thick paste.
  3. Ready to use immediately, or wrap well and store in the fridge until ready to use - up to 10 days.

Notes

  • If the mixture is too dry and not coming together, add a teaspoon of water or lemon juice to help it bind.
  • Marzipan is sweeter and smoother in texture compared to almond paste.
  • Consider adding rose water to lend a subtle floral flavor.
