Description
This marzipan starts by finely pulsing almond meal with caster and icing sugars to create a powdery base. Egg whites and almond essence are then added and processed until the mixture forms a cohesive, thick paste. This paste is sweet, smooth, and elastic enough to be shaped easily. It is sweeter and more refined than almond paste due to the sugar proportions.
The marzipan is ready to use immediately, whether for rolling out decorations, molding shapes, or incorporating into recipes, and can be stored wrapped in the refrigerator for up to 10 days to preserve freshness. Adjusting moisture with a small amount of water or lemon juice helps if the paste is too dry.
Marzipan can be used in traditional German Christmas recipes, like stollen, or rolled into decorative candies. Adding a few drops of rose water enhances its aroma and flavor.
Ingredients
- 3 cups almond meal or ground almonds, 300g
- ½ cup caster sugar superfine sugar, 100g
- 2 ½ cups icing sugar 350g
- 2 egg white
- ½ teaspoon almond essence
Instructions
- Add the almond meal and both sugars to a food processor and pulse until it’s a fine powder.
- Add the egg whites and almond essence and pulse until it comes together into a thick paste.
- Ready to use immediately, or wrap well and store in the fridge until ready to use - up to 10 days.
Notes
- If the mixture is too dry and not coming together, add a teaspoon of water or lemon juice to help it bind.
- Marzipan is sweeter and smoother in texture compared to almond paste.
