These Masala Chips are the ultimate flavour packed side dish. Chunky chips coated in an Indian spiced sauce and then loaded with fresh chillies and herbs.

Ingredients

  • 200 g Frozen chips
  • 1 tablespoon vegetable oil
  • 1 onion small
  • 1 teaspoon garlic and ginger paste
  • 1 teaspoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 2 tablespoon ketchup
  • 3 tablespoon water

Instructions

  1. Cook 200 g Frozen chips according to the packet instructions. We cooked ours in an air fryer to make it quicker.
  2. While the chips are cooking prepare the masala. Heat 1 tablespoon Vegetable oil in a pan and add 1 Onion and 1 teaspoon Garlic and ginger paste. Cook on low until the onions have softened, about 3 minutes.
  3. Add 1 teaspoon Curry powder, 1 teaspoon Cumin and 1 teaspoon Cayenne pepper. Stir, continuing to cook for a further minute.
  4. Add 2 tablespoon Ketchup and 3 tablespoon Water and mix well. Simmer until the sauce has thickened, about 5 minutes.
  5. Add the cooked chips to the sauce and mix well.

Notes

  • For some extra earthy flavour, and to add colour, you can add 0.5 teaspoon of turmeric at the same time as the other spices.
  • If you like a spicier flavour, then you can add more cayenne, chilli powder and extra fresh chillies when serving.
  • Make sure that the oven chips you use are all evenly sized, as they will all cook at the same rate that way. The cheaper supermarket own brand frozen chips tend to have very random sizes, so this is another reason why the better quality ones are best.
  • You can make your own chips for this recipe if you want everything to be homemade.
  • Make sure that you combine the chips with the masala sauce whilst they are still hot and crispy.
  • If you don't want to use ketchup, you can take it out along with the water and use 50ml or passata instead.
