Description
This recipe starts by cooking frozen French fries until crispy, ideally in an air fryer for convenience. Meanwhile, a masala sauce is prepared by softening onions with garlic and ginger pastes, then stirring in a blend of curry powder, cumin, and cayenne pepper to build aromatic heat. Ingredients
- 200 g frozen French fries
- 1 tablespoon vegetable oil
- 1 onion small
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon curry powder
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 2 tablespoon ketchup
- 3 tablespoon water
Instructions
- Cook 200 g Frozen chips according to the packet instructions. We cooked ours in an air fryer to make it quicker.
- While the chips are cooking prepare the masala. Heat 1 tablespoon Vegetable oil in a pan and add 1 Onion and 1 teaspoon Garlic and ginger paste. Cook on low until the onions have softened, about 3 minutes.
- Add 1 teaspoon Curry powder, 1 teaspoon Cumin and 1 teaspoon Cayenne pepper. Stir, continuing to cook for a further minute.
- Add 2 tablespoon Ketchup and 3 tablespoon Water and mix well. Simmer until the sauce has thickened, about 5 minutes.
- Add the cooked chips to the sauce and mix well.
Notes
- Turmeric can be added alongside the spices for added color and earthiness.
- Adjust the cayenne and add fresh chilies to increase the heat level to your preference.
- Choose uniform-sized frozen chips to ensure even cooking; higher quality brands are preferred.
- You may substitute ketchup and water with 50ml of passata for a different sauce style.
- Combine the chips with the masala sauce while the fries are still hot and crispy for best absorption.
- Homemade chips can be used instead of frozen for a fully homemade version.
