Mashed Potato Soup
Description
The Mashed Potato Soup recipe combines butter and flour to make a roux, then gradually mixes in chicken broth and milk to form a smooth, creamy base. Adding mashed potatoes and cheddar cheese enriches the soup, resulting in a thick and smooth texture that can be adjusted by varying the potato or broth quantities. The broth and milk create a mild dairy flavor that complements the potatoes and cheese without overwhelming them.
The soup is seasoned simply with salt and black pepper, allowing the cheddar cheese to lend a gentle sharpness. Optional toppings like crispy bacon, green onion, and sour cream add savory depth and complementary textures. These garnishes also help customize each serving according to taste.
This soup suits chilly days, using leftover mashed potatoes to minimize waste and effort. The recipe notes encourage varying thickness to personal preference and suggest sautéing onions or garlic, or adding herbs for more complex flavors if desired.
