  • 2 Tablespoons butter unsalted
  • 2 Tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • 4 cups chicken broth
  • 1 cup milk whole
  • 4 cups mashed potatoes prepared
  • ½ cup cheddar cheese
  • cheddar cheese optional for serving; green onion aka chives
  • Bacon

Instructions

  1. In a large pot, melt the butter over medium heat and add the flour, salt and pepper. Whisk ingredients together and cook for 1 minute.
  2. Slowly pour the chicken broth into the pan, whisking constantly until smooth.
  3. Then add the milk, mashed potatoes and cheddar cheese. Whisk together and cook for 5 minutes stirring constantly just until the soup reaches a simmer.
  4. Continue cooking until desired thickness is reached.
  5. Serve with optional toppings.

Notes

  • Leftover or freshly made mashed potatoes work equally well, whether plain or seasoned.
  • Adjust soup thickness by adding more mashed potatoes for thickness or more broth for a thinner consistency.
