Mashed Purple Sweet Potatoes and Banana

These mashed purple sweet potatoes make an easy side dish. Just make roasted purple sweet potatoes and mash with a banana into a sweet potato puree. Serve your purple mashed sweet potatoes with roast chicken or pork or as an unusual Thanksgiving side dish.

Ingredients

  • 2 small purple sweet potatoes one per person
  • 1 small to medium banana one half per person
  • ½ teaspoon salt
  • 1 tablespoon butter optional
  • 1 tablespoon cream or milk (dairy or non-dairy) optional

Instructions

  1. Turn on your oven to 450°F.
  2. Scrub the sweet potatoes. Use a fork to puncture the skin in several paces, and then wrap them in aluminum foil.
  3. Bake for 45 to 60 minutes until the skin and flesh is easily pierced with a fork.
  4. Let the potatoes cool enough so that you can handle them. If you want to peel them, use a knife to cut a thin slit in the skin and peel.
  5. Combine the peeled sweet potatoes and banana in a small to medium sized bowl and mash them with a potato masher or fork until well-combined. Add salt and butter, milk, or cream, if you are using them, adding a little bit at a time and adjusting for taste and texture as desired. Serve warm.
