Description
This recipe starts by combining cold heavy cream with a sweetener such as cane sugar, maple syrup, or honey, along with vanilla extract and a pinch of salt in a Ball® Wide Mouth Pint Jar. Shaking the mixture vigorously for about five minutes thickens it to a consistency similar to brownie batter. After this, the jar is frozen, and shaken every 20-30 minutes to distribute mix-ins and avoid crystallization, resulting in a smooth texture within 2 to 3 hours.
The ice cream's texture is creamy though somewhat different from churned ice cream, and this method allows incorporation of flavor variations. Added ingredients before freezing can include cocoa powder for chocolate, pureed or jammed strawberries for fruit, crushed cookies for cookies and cream, mint extract and chocolate chips for mint chocolate chip, peanut butter, or lemon juice with zest for lemon flavor. Coloring may be added for visual effect but is optional.
This approach requires using freezer-safe jars with straight sides to prevent cracking and ensure safe freezing. The no-churn method is convenient for small batches and experimenting with various flavors without ice cream machines or special tools.

Instructions
- In a Ball® Wide Mouth Pint Jar, combine the heavy cream, sweetener, vanilla extract, and salt.
- Place the lid on the jar, twist closed tightly, and shake. Shake the mixture until it is about doubled in size and about the consistency of brownie batter. It should take around 5 minutes.
- Place the jar in the freezer. It should be ready to enjoy in about 2-3 hours. Shake every 20-30 minutes to incorporate any mix-ins and prevent iciness.
Notes
- Use a freezer-safe Ball® wide mouth jar with straight sides to safely freeze and shake the mixture.
- Chocolate ice cream variation: add 1-2 tablespoons unsweetened cocoa powder before shaking.
- Strawberry option: blend 1/2 cup fresh or frozen strawberries into a puree or add 1-2 tablespoons strawberry jam before shaking; optionally add red food coloring.
- Cookies and cream: mash 2-3 chocolate sandwich cookies into pieces and mix into the ice cream before freezing.
- Mint chocolate chip: add a few drops of mint extract and mini chocolate chips before freezing; optionally add green food coloring.
- Peanut butter: stir in one teaspoon peanut butter before shaking.
- Lemon: add one teaspoon lemon juice and 1/2 teaspoon lemon zest plus optional yellow food coloring before shaking.
