Description

This Matcha Eggnog starts with whisking egg yolks, sugar, matcha powder, and vanilla extract until the mixture lightens in color, building a smooth base. Ingredients

  • 2 egg yolk
  • 45 g granulated sugar
  • 3 g matcha green tea powder
  • 1 teaspoon vanilla extract
  • 250 ml milk whole
  • 125 ml heavy cream
  • ¼ teaspoon nutmeg grated
  • ½ teaspoon ground cinnamon

Instructions

  1. Add egg yolks, sugar, matcha and vanilla extract to a heat-safe glass bowl.
  2. Whisk matcha egg mixture until lightened in colour. Set aside.
  3. In a small saucepan, combine the milk and heavy cream and heat to a simmer.
  4. Gradually pour the warmed milk/cream mixture into the egg yolk mixture while whisking, also known as tempering the eggs.
  5. Once all the milk/cream has been added to the egg mixture, pour the entire mixture back into the saucepan.
  6. Stir the mixture until slightly thickened.
  7. Add in the ground cinnamon and freshly grated nutmeg.
  8. Strain the matcha eggnog into a clean jar and allow to cool.
  9. Chill eggnog in the fridge before serving.
