Meal Prep Pasta Salad ft Power Blend

This meal prep pasta salad is perfect for warm days or when you are heading somewhere without a microwave!

Ingredients

  • 1 cup split peas
  • 2.5 cups pasta
  • 1 bag Power Blend

Dressing

  • 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp parmesan
  • 2.5 tbsp honey mustard
  • 1 plash Worcestershire sauce 

Instructions

  1. Start by bringing a pot of water to a boil and add in your split peas. The split peas should take around 25 minutes to cook throughly. The pasta I used takes 9 minutes to cook so 16 minutes in, I added the pasta to the water.
  2. While the pasta and split peas are cooking on the stove, in a small bowl, mix the honey mustard, Worcestershire sauce, olive oil, parmesan, and lemon juice together. The lemon is to taste so taste as you go!
  3. Once the pasta and splits are done, drain the water, and toss on the dressing. Serve immediately or chilled.
