  • 50 Parmigiano Reggiano cheese finely grated, 1.75 oz
  • 100 bread crumbs 3.5 oz
  • 1 tbsp parsley chopped
  • 1 pinch nutmeg grated
  • 1 tsp salt
  • 1 pinch black pepper

Marsala Sauce

  • 20 butter 1.5 tbsp
  • 1 tbsp extra-virgin olive oil
  • 150 ml marsala wine 2/3 cup
  • 2 ½ tbsp all-purpose flour
  • 60 ml water 1/4 cup
  • ½ tbsp thyme
  • salt to taste
  • black pepper to taste
