- 50 Parmigiano Reggiano cheese finely grated, 1.75 oz
- 100 bread crumbs 3.5 oz
- 1 tbsp parsley chopped
- 1 pinch nutmeg grated
- 1 tsp salt
- 1 pinch black pepper

- 20 butter 1.5 tbsp
- 1 tbsp extra-virgin olive oil
- 150 ml marsala wine 2/3 cup
- 2 ½ tbsp all-purpose flour
- 60 ml water 1/4 cup
- ½ tbsp thyme
- salt to taste
