Meatball Sub Casserole
Description
This casserole starts with cutting biscuit dough into pieces placed in a greased baking dish, then coated with marinara seasoned with garlic powder and Italian herbs. Thawed Italian-style meatballs are nestled throughout, providing a meaty, savory dimension. The dish is covered with shredded mozzarella cheese and baked covered to allow the dough to cook through fully while the flavors meld.
After bubbling for 30 minutes, the foil is removed to add more cheese on top, which melts and browns during an additional baking period, creating a golden, cheesy crust. Optional fresh herbs add a bright garnish. The cheese and sauce tenderize the biscuit dough, resulting in soft, saucy bites with a rich, savory profile reminiscent of a meatball sandwich but in casserole form.
This makes a practical meal for families or gatherings since it can be prepared in one dish and served hot. The option to heat sauce and meatballs before assembling can help ensure the biscuit dough bakes completely. Fresh herbs make a nice finishing touch.
Ingredients
- 1 can biscuit dough refrigerated, 8 count
- 14 oz Italian style meatball I use the 1/2 oz size meatball, which has about 28 meatballs in the bag, frozen, thawed
- 1 1/2 cups marinara sauce
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 2 cups mozzarella cheese shredded
- basil optional - for garnish, or parsley, minced, fresh
Instructions
- Preheat oven to 375 F degrees and spray a large oven safe skillet or 3 qt baking dish with non stick spray. Set aside. Lightly spray one side of a piece of aluminum foil with non stick spray and set aside.
- Remove biscuit dough from can and slice each biscuit into 8 pieces. Add to greased skillet or baking dish.
- Top with marinara sauce, garlic powder and Italian seasoning. Stir around to mix seasonings into sauce and coat dough in sauce.
- Nestle thawed meatballs into and on top of the dough pieces. Cover with half the shredded cheese, and cover skillet or dish with foil, sprayed side down.
- Bake for 30 minutes, remove foil, add remaining cheese, and bake another 15 minutes until bubbly and cheese is melted. If desired, broil a minute or two.
- Serve hot, garnished with fresh herbs, if using.
Notes
- To ensure the biscuit dough cooks fully, preheat sauce and meatballs until hot and bubbly before mixing with the dough and baking.
- Use fresh basil or parsley as garnish to add aroma and color before serving.
- This casserole can be made in a large oven-safe skillet or a similarly sized baking dish.
