Description

Meatloaf Hamburger Patties are individual beef patties seasoned with oregano and garlic powder, bound together by egg and crushed saltine cracker crumbs, which add subtle texture and moisture retention. The addition of chopped onions provides mild sweetness and moisture. Cooking in a cast iron skillet allows for even browning and a caramelized crust.

A glaze of ketchup mixed with brown sugar is spread on the patties during cooking to form a sticky, sweet exterior that contrasts with the savory beef. The patties are cooked until no longer pink inside and allowed to rest, which helps redistribute juices for a tender bite.

Meatloaf patties

  • 1 lb. ground beef lean
  • 1/2 cup onion about 1/2 a small onion, chopped
  • 1 egg large
  • 1/2 cup saltine cracker crumbs (about 12 crackers)
  • 1 teaspoon oregano dried
  • 1 teaspoon garlic powder
  • 1/3 cup ketchup
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Topping

  • 1/3 cup ketchup
  • 3 Tablespoons light brown sugar

Instructions

  1. In a large bowl, combine all of the meatloaf ingredients and mix together by hand. Shape into 4-5 individual patties.
  2. Make the topping by combining 1/3 cup ketchup and the brown sugar in a small bowl and stirring until smooth.  
  3. Heat a large cast iron skillet over medium heat then add a little oil to it. When the oil is hot, carefully place each hamburger patty into the skillet and cook for about 5-7 minutes until nicely browned on the bottom, then flip to cook the other side. Immediately top each hamburger patty with some of the brown sugar ketchup topping while the patties cook for another 5 minutes on the other side.  
  4. When the meatloaf patties are no longer pink in the center, remove from the skillet and let rest for 5 minutes so the juices can redisperse. Serve with mashed potatoes and green beans, or on hamburger buns for a meatloaf sandwich.

Notes

  • Substitute saltine cracker crumbs with bread crumbs or finely processed oats if unavailable.
  • Meatloaf patties can be baked at 375°F for 20 minutes as an alternative to skillet cooking.
