Description
This recipe prepares chicken thighs seasoned with salt and pepper, seared skin-side down to develop a lightly golden crust in olive oil. After searing, the pan is filled with cut potatoes, cherry or grape tomatoes, roasted red peppers, capers, crushed garlic cloves, and fresh oregano or dried oregano. The entire pan is seasoned further and drizzled with additional olive oil before roasting in a 400°F oven for 45 to 55 minutes. This process softens the vegetables and allows the flavors to meld while the chicken finishes cooking thoroughly, resulting in a harmoniously textured dish.
The dish balances crispy-skinned chicken with tender, aromatic vegetables featuring bursts of acidity from tomatoes and capers and a mild smokiness from roasted peppers. Ingredients
- 8 chicken thighs
- salt
- black pepper
- olive oil
- 1 1/2 pounds potato scrubbed and cut into small chunks
- 1 pint tomatoes cherry or grape
- 10 ounces red bell pepper drained and sliced, roasted
- 1/4 cup capers (drained)
- 8 cloves garlic (peeled and crushed)
- 5 prigs oregano or 1 teaspoon dried oregano, fresh
- 3 tablespoons parsley (finely chopped, optional)
Instructions
- Preheat oven to 400°F/200°C.
- Rinse the chicken and pat dry with paper towels. Season the chicken with salt and pepper. Heat a stainless steel roasting pan on the stove (you can use 2 burners) over medium high heat, and add a few tablespoons of olive oil.
- Sear the chicken in the roasting pan skin-side down until lightly golden. Flip the chicken over, and turn off the stove.
- To the chicken in the roasting pan, add the potatoes, tomatoes, red peppers, capers, garlic, and oregano. Season everything with a bit more salt and pepper to taste, and drizzle with a few more tablespoons of olive oil. Throw into the oven for 45-55 minutes.
- Sprinkle with parsley if desired and serve!
