Mediterranean Chopped Salad with Creamy Greek Dressing

This Mediterranean Chopped Salad features a delicious homemade Creamy Greek Dressing and is loaded with all your favorite veggies!

Ingredients
- 4 cups chopped romaine lettuce
- 1 cup bell pepper , diced
- 2 roma tomatoes , diced or sliced
- 1-2 cups chopped English cucumber
- 1/4-1/3 cup chopped red onion
- ¼ cup crumbled Feta cheese , plus extra if desired
CREAMY GREEK DRESSING
- ⅓ cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP Dijon mustard
- 1 clove garlic peeled
- ⅓ cup crumbled Feta cheese
- ¼ cup plain greek yogurt
- ½ tsp dried parsley
- ¼ tsp dried oregano
- ¼ tsp dried basil
- ⅛ tsp salt
- ⅛ tsp black pepper
- 2 TBSP water
Instructions
- Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
- No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.
- Allow dressing to sit while you chop and toss together your salad, then shake again before serving.
- Pour the dressing over salad and mix to coat. Enjoy!
Notes
- Leftover dressing keeps marvelously in the fridge for a few days so if you'd like to double the recipe and have extra - go for it! The dressing is also AMAZING swirled into pasta salad.

- Optional extras include sliced banana, spicy pepperoncini peppers, toasted pita "croutons" or your favorite variety of olives. You could even add chopped avocado!
