Ingredients

  • 1 pound pizza dough
  • 3 tablespoons pesto
  • 1 cup Artichoke halved, quartered
  • 1/2 cup kalamata olives halved
  • 1/3 cup sun-dried tomatoes drained, in oil
  • 1/4 cup red onion sliced
  • 1/3 cup feta cheese crumbled
  • 2 tablespoons Parmesan Cheese freshly grated
  • 1 cup arugula
  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 450ºF. (If using a pizza stone, place it in the oven and preheat for at least 30 minutes.)
  2. Stretch or roll the pizza dough out into a 12” circle. (See my pizza dough post for all my tips and tricks.)
  3. Spread the pesto over the crust, then top with the artichokes, olives, oil, and red onion. Sprinkle both cheeses over the top.
  4. Transfer the pizza to the oven and bake until the crust is golden, about 10 to 12 minutes.
  5. While the pizza is cooking, rub the olive oil into the arugula. Season with salt.
  6. Top the pizza with the arugula before serving.

Notes

  • *I like my pizza crust a little thinner, so I will use about 12 oz of dough per pizza instead of 1 pound.
