Mediterranean Sausage and Peppers - Spetzofai
Description
This Spetzofai recipe combines sliced red and green bell peppers with sausage cooked briefly in olive oil before adding garlic, tomatoes, a pinch of sugar, salt, and herbs. Simmering gently for about 20 minutes allows the flavors to deepen and the ingredients to soften while maintaining some texture. The addition of oregano and black pepper at the end enhances the Mediterranean herbal notes.

Ingredients
- 2 red bell pepper sliced
- 2 green bell pepper sliced
- 3 ounces sausage sliced
- ⅓ cup olive oil
- 2 garlic cloves, sliced thinly
- 1 sugar a pinch
- ⅛ teaspoon salt
- 12 ounces tomato chopped
- black pepper freshly ground
- 2 teaspoons oregano dry

Instructions
- In a large pan heat the olive oil.
- Sauté the peppers and sausage for about 5 minutes.
- Add the sugar, salt and garlic. Sauté for a few seconds, and then add the tomato. Stir well.
- Lower the heat and simmer for about 20 minutes.
- Add very little hot water if needed while simmering.
- Remove from pan. Sprinkle some oregano and add some pepper.
- Serve warm on pasta or rice or with bread and crumbled feta.
