Melted Snowman Brownies
Description
The base brownies are made by combining melted butter, sugar, vanilla, eggs, cocoa powder, and flour, resulting in a soft and chewy texture when baked correctly. The use of melted butter contributes to a moist crumb, while careful mixing ensures the batter is not overworked, preventing toughness. Baking for about 20 minutes allows the center to set without drying out.
Once cooled and cut into squares, the brownies are decorated with marshmallows adorned with royal icing faces resembling melting snowmen. The icing is made from whipped egg whites, confectioners' sugar, and lemon juice to achieve a pipeable consistency that holds shape. This festive decoration adds visual appeal and sweet flavor contrast to the chocolate base.
These brownies serve well as a seasonal treat or festive dessert, combining familiar brownie texture with playful, themed toppings.
Using fresh, room temperature ingredients and sifting cocoa into the batter avoids lumps and ensures smoothness. The marshmallow decorations should be applied once brownies are completely cooled for adherence. Piping with small tips allows for detailed snowman faces.
Ingredients
For the brownies
- ½ cup butter melted
- ¾ cup sugar 150g
- 1 teaspoon vanilla extract
- 2 egg large
- ½ cup unsweetened cocoa powder
- ½ cup all-purpose flour plain flour
For the royal icing
- 1 egg white
- 1 ½ cups confectioners' sugar or more as needed, sifted
- 1 teaspoon lemon juice or as needed
To decorate
- 16 marshmallows
- decorating gel black and orange, writing icing
Instructions
- Preheat the oven to 350°F/175°C. Lightly grease an 8x8-inch square pan with spray oil or butter, or line with baking parchment paper.
- Whisk the butter, sugar and vanilla in a medium bowl together well.
- Whisk in the eggs, one at a time.
- Sift in the cocoa powder and flour, and gently stir to combine (don’t overmix, but ensure there are no streaks of flour).
- Pour the batter into the pan and spread out to the edges. Bake for 20 minutes or until the centre is just about set (don’t overbake or it will be cake-like and not chewy and soft).
- Cool completely then remove from the pan and cut into squares.
- Meanwhile, for the royal icing, beat the egg white lightly in a large bowl using an electric mixer until frothy. Slowly beat the powdered sugar into egg whites, a tablespoonful at a time, to make icing that will hold shape. Mix in the lemon juice. Add a little more juice to thin, or more sugar to thicken.
- Decorate the marshmallows with snowman faces.
- When the brownies are completely cooled, drizzle with the royal icing and top with a decorated marshmallow to look like a melted snowman.
Notes
- Use melted butter and room temperature ingredients to create a moist, soft brownie texture.
- Sift cocoa powder thoroughly into the batter to prevent lumps and ensure even chocolate flavor.
- Do not overmix the batter to avoid tough brownies; mix until just combined.
- Decorate marshmallows on fully cooled brownies so they adhere properly.
- Use a small star piping tip with black and orange gel icing to detail the snowmen’s faces.
